Freak Spinach Leaves

While harvesting greens last week Matt found a plant that had been putting out some total freak leaves.  They'd folded up into a complete tube--the top of the leaf was the inside and the bottom of the leaf was the outside.  They looked like tulips!  Well, except for the fact it was one continuous leaf tube rather than a series of overlapping petals.  It was cool.  And weird.  I've always found nature's oddities like this most interesting.  Makes me wonder...
