Corn Dumplings


I had never made dumplings before.  I remember my mom making them, but that they weren't my favorite.  Matt can remember his mom making them and how much he loved them.  So, for Matt's sake I thought I'd try to find a recipe and give it a whirl.  

When they sank to the bottom of the pot when added to the soup I thought for sure I'd just ruined some tasty looking soup.  That they were dissolving and I'd end up with a pot of vegetable mush.  But, after several minutes they popped back up the the surface again and all was well.  

Well, almost well.  I put three cayenne peppers in the vegetable soup rendering it "unpleasantly spicy" to Matt's tongue.  I thought it was perfect.  The only thing that made it bearable for Matt was the dumplings, which tempered the spice.

 Corn Dumplings

¾ cup flour
1 Tablespoon cornmeal
1 ½ teaspoons baking powder
1 teaspoon honey
½ teaspoon salt
1 Tablespoon Earth Balance (margarine)
½ cup soymilk
1/3 cup frozen, whole corn


Combine dry ingredients and honey.
Cut in the Earth Balance with a fork until no large pieces remain.
Add milk and corn.
Stir until well mixed.
Bring your soup to a boil.
Drop dough by rounded tablespoonsful into the soup broth, making 6-8 dumplings.
Cover and reduce heat to medium-low.  It should not be boiling.
Cook the dumplings for about 10 minutes.

Funny story: I must have been distracted while cooking (always a bad idea for me).  I totally forgot the baking powder.  They were surprisingly yummy without it, but I bet they are fluffy and incredible with a little leavening agent involved....  Since they were so good even when I messed up the recipe I figure that is a good sign.  I'll be making them again...and paying closer attention when doing so.

  1. Corn dumplings sound fantastic. But, I have to ask about Earth Balance. Could it be an egg substitute? Sometimes I make chile with hominy in it. Corn dumplings would go perfectly.
    We had a nice, but brief jaunt to Billings. We couldn't remember how long it has been for us. My mom lived in Laurel for a number of years, but she passed away 6 years ago.
    The Cabelas was fun. I read a book at the snack bar, so they boys didn't feel rushed.
    David got a fishing rod and reel on sale and I got some cargo pants from the "bargain cave". Jonathan was delighted to get a stuffed trout pillow.
    It was interesting as we left Helena to notice how the traffic increased and the amount of "urban sprawl" that continues to occur around Helena and the Bozeman area.
    On the return trip, we were delighted when the traffic was almost nil when we got north of Helena. I'm thankful for our quiet part of the state!

  2. Earth Balance is the organic margarine I use. Sorry, that was less than clear. I updated the post to include the word margarine.

    I am glad you had a good visit. I kind of thought Cabellas had a snack bar when you first mentioned you would be visiting it soon, but I wasn't positive. I am glad you find a place to read. I get shopped-out quickly so I would certainly prefer a book to browsing!

    My mother and sister live in Bozeman. Well, Belgrade, technically. I must say that I cannot really stand that place. Everything looks the same and the traffic is horrible. I always wonder that Billings doesn't have worse traffic. I guess I've heard some horror stories about the West End (where Billings is sprawling), but I rarely drive that far west so I am oblivious.

    I bet corn dumplings with hominy chili would be a match made in heaven.

  3. I have never had corn dumplings. I'm not sure I've even heard of them, but I'm sure I would love them. I've made flour dumplings plenty though. I'm going to give this recipe a try. Thanks!

    1. When I was looking for dumpling recipes and I stumbled upon one with corn I KNEW that was the one I should try. I love corn....
