Balsamic Potato Pizza Heaven

I love pizza.  I love potatoes.  I love balsamic vinegar.  This pizza with a balsamic flavored sauce, layered with thinly sliced potatoes, magically combines all three.  And then I put caramelized onions on it to boot!  Balsamic pizza heaven!  It doesn't even need cheese its so magnificent.

Balsamic Potato Pizza
Prepare pizza dough and set aside.
Caramelize some diced onions over low heat until browned, tender, and delicious.
Meanwhile, prepare the balsamic sauce (see below).
Thinly slice up two or three potatoes and toss the slices with a little oil and some salt and pepper.  
Cut other toppings as desired--peppers and spinach are fantastic.
Roll out the dough and top with the balsamic sauce, caramelized onions, and diced peppers, etc.  (Though any greens should be added just at the last minute as all they need is to wilt a little.)
Then a layer of potatoes is placed on top, with each potato just overlapping the next.
Bake for 35 minutes at 400 degrees F.
If using spinach or other shredded greens add them for the last minute or two of baking time.

Balsamic Pizza Sauce
1/4 c olive oil
1/4 c balsamic vinegar
2-6 T fresh herbs, rosemary and basil especially
3 cloves garlic
pinch of salt
ground black pepper, to taste

Combine in a blender and process two minutes.
