Strawberry Salsa Toast

June is strawberry season at our place.  Once again, the berry patch has been very prolific.  
Matt's baby pies--and ice cream--to celebrate his dad.
We've eaten more fresh strawberries than I can count.  Matt made his dad little cupcake-sized strawberry pies for Father's Day.  We froze several cups for our breakfast smoothies.  For two weeks straight, I brought a bowl of strawberries-and-milk to work for my afternoon snack.  
1 1/2 cups chopped strawberries + 1 teaspoon sugar + 1/4 cup almond milk = YUUUUUUUUUUM
Best of all, I made a double batch of strawberry salsa.  And then another double batch.  That stuff is deeeeeeeeeeeeeeelicious.  On tortilla chips.  On tacos.  In a wrap.  Whatever!

Yesterday I had a breakfast revelation:  Buttered sourdough toast topped with that glorious strawberry salsa.  Today, we upped the ante:  Sourdough toast with blueberry cashew cheese and strawberry salsa.

Something tells me that avocado toast topped with strawberry salsa would also be top-notch.  I'll have to buy an avocado and find out.  Soon.  The last strawberry haul was definitely smaller than at the start of June.  Time is of the essence.  Strawberry season won't last forever.
I think I'll make another double batch of salsa tomorrow.
